This week we have lots going on, and two nights where we won't be home until late, so the dinners are gonna be easy ones!
Last night I boiled and shredded/chopped a bag of frozen chicken breast so I would have meat to make three meals this week.
Sunday: Chicken Noodle Soup
Monday: Arroz con Pollo
Tuesday: Mexican Chicken Casserole
Wednesday: choir night - kid's choice
Friday: Halloween carnival at school
I'm leaving Saturday open as leftover night, since we may have plans that night. Hopefully cooking the meat this weekend will help me better follow along this plan!
