31 Days of Simply Homemade: (Day 23) Menu Plan

This week we have lots going on, and two nights where we won't be home until late, so the dinners are gonna be easy ones!

Last night I boiled and shredded/chopped a bag of frozen chicken breast so I would have meat to make three meals this week.

Sunday: Chicken Noodle Soup
Monday: Arroz con Pollo
Tuesday: Mexican Chicken Casserole
Wednesday: choir night - kid's choice
Thursday: Burritos
Friday: Halloween carnival at school
Saturday: Leftovers

I'm leaving Saturday open as leftover night, since we may have plans that night. Hopefully cooking the meat this weekend will help me better follow along this plan!

  1. This may sound like a silly question but how do you boil and chop/shred frozen chicken? I've only ever baked, barbequed or crockpotted it and would to learn a simpler way to prepare chicken for a few meals!
