Put this one together the other night when I wanted a one dish wonder. Kids gobbled it up and I kinda liked it too.
Chicken & Bacon Mac 'n Cheese
1/2 pound cooked macaroni
2 chicken breasts
Basic Cheese Sauce (recipe below)
2 slices of cooked bacon, diced.
2 cups shredded cheddar/jack cheese
3/4 cup Breadcrumbs mixed with 2 Tbsp melted butter
Preheat oven to 375 degrees.
Season chicken breast with garlic, onion and chili powders and grill until fully cooked. Slice and set aside.
Pioneer Woman has a fabulous recipe for cheese sauce - make that! Or use your own favorite recipe.
Layer your ingredients in a greased casserole dish:
Cooked Macaroni
Cooked & diced bacon
Sliced chicken breast and shredded cheese
Breadcrumbs mixed with melted butter.
The breadcrumbs on top brown, giving a nice little crunchy texture to the dish.
Bake for about 20 minutes until nice and bubbly and the top is browned.
Enjoy it, because it will be gone fast - it's delicious!!!
