Spinach and Goat Cheese Pasta {Quick & Easy Recipe}

Two of my new favorite foods are spinach, and goat cheese. I had some leftover pasta in my fridge the other day and thought I'd fancy it up a bit, and it was delish!!

This one is so easy and just takes a couple of minutes so I can whip it up when I come home on my lunch break.

There are no precise measurement with this one, it's all based on how many people you're feeding and how hungry you are. I just make enough for a meal for one.


Ingredients:
minced garlic
olive oil
raw spinach
cooked pasta (ziti or penne work well, but any pasta will do)
goat cheese
lemon juice

Saute a spoonful of minced garlic with a little olive in a pan over medium heat. Add spinach (I used a couple big handfuls) and saute until bright green, but not wilted. Add a cup or so of cooked pasta and heat through. Add a little lemon juice if desired. Remove from heat and stir in a few chunks of goat cheese until melted. The goat cheese makes a nice "sauce."

Serve yourself a big 'ol bowl of that bad boy and pat yourself on the back for eating your vegetables.
