Baked Orange Chicken Recipe

This is another one of those recipes that I came up with on the fly. I remembered seeing a similar recipe somewhere but I couldn't find it so I made it up. That's kinda how we roll around here.


What you need:
Chicken Breasts
Brown Sugar
Orange Juice
Onion Powder
Dry Mustard
Salt & Pepper

(Disclaimer: There are no real measurements as it depends on how many chicken breasts you need.)

(Disclaimer #2: Have you noticed that many of my recipes call  for do it yourself measurements?)

Preheat your oven to 400 degrees. Grease a baking dish lightly with cooking spray.

Season chicken breasts generously with salt and pepper and place in your baking dish.

Sprinkle tops of chicken breasts with dry mustard and onion powder and sprinkle each piece with a tablespoon of packed brown sugar.

Pour orange juice in the pan just to the tops of the chicken and sprinkle with a couple pinches of brown sugar. 

Bake at 400 degrees for 15-20 minutes. 

Pour juice into a glass measuring cup then return chicken to the oven and bake for another five minutes.

To make the sauce, melt a tablespoon of butter over medium heat in a saucepan on the stove. Add 1 tablespoon of flour and mix well with a whisk. Pour in about a cup of the reserved juice and bring to a boil, stirring often. Simmer for about ten minutes. If sauce is too thin, add a little more flour and whisk until completely dissolved. Spoon sauce over chicken and serve. 

I like to serve this with rice and spoon sauce over it too. Delicious!

  3. We made your bacon and chicken Mac & Cheese.....OhMyGoodness was it good!!!! The basic Mac & cheese recipe is the only one I'll use for homemade now, and everything is better with bacon! I might omit the breadcrumbs on top next time, however they retained crunchiness and flavor on the reheat (better than on the first serving, actually) so that was a plus.
