If you love tacos, you are going to love this Creamy Taco Dip. When my daughter saw that I had made this dip, she got very excited. She came bounding out of the kitchen saying, “Mom, mom! Can I have some of that thing in there??” (She’s not the best at explaining what she’s thinking). Finally I figured out what she was talking about and granted her wish. Two servings later she still wanted more! I had to have her pump the brakes, but she made me promise she could have some the next day for snack again.

I said yes, but to be honest I’m just as obsessed with it so I can’t make any promises! Good thing it’s super easy to make. We may just be making another batch tomorrow!

You probably already have most of the ingredients on hand – ground beef, cream cheese, Rotel tomatoes (salsa would make an easy substitute), pinto beans, corn and a little taco seasoning for flavor. It isn’t spicy, but you could easily spice up this dish by adding a small can of diced jalapenos or replacing the Rotel with some spicy salsa. We shy away from too much heat, but you could definitely play around with the recipe and make it your own.

This Creamy Taco Dip is sure to be the hit of your next party. It’s creamy and meaty and full of flavor, making it perfect for tailgating, too!

Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon Taco seasoning
  • 10 ounce can Rotel Tomatoes with green chiles
  • 8 ounces cream cheese
  • 1/4 cup water
  • 8 ounce can corn drained
  • 15 ounce can pinto beans drained
  • 1 cup shredded Cheddar-Jack cheese
  • 8 ounce can sliced olives drained

Instructions
 

  • Preheat oven to 375 degrees. Lightly grease an 11"x7" (or larger) baking dish with cooking spray.
  • Heat a tablespoon of olive oil over medium heat. Crumble in ground beef and cook until no longer pink. Drain.
  • Stir in taco seasoning, Rotel, cream cheese and water. Simmer for about 7-8 minutes. Remove from heat.
  • Stir in pinto beans.
  • Pour meat mixture into prepared baking dish. Sprinkle with shredded cheeses and top with olives and green onions.
  • Bake in the preheated 375 degree oven for about 15-20 minutes, or until cheese is melted and bubbly.

Notes

Serve hot with tortilla chips for dipping.

  1. This definitely looks like a winner for us! We love anything taco-ish and spicy, so we’ll be adding some jalapenos and chipotles! It would make a nice “light” meal too!
