There’s just something about Red Velvet that screams “Valentine’s Day” I love Cake Mix Cookies, so I thought these Red Velvet Cake Mix Bars would be a fun variation. And of course who can resist something with M & Ms mixed in?

Red Velvet Cake Mix Bars with M&Ms - a perfect treat for your Valentine!

These bars don’t taste super cake-y, but rather more brownie like. In fact my kids kept asking for more “red brownies” – they really loved them!

They are easy to make with just a box of Red Velvet cake mix, an egg, a stick of softened butter and a splash of vanilla. Oh, and a bag of M & Ms – can’t forget those!

 They bake up beautifully, just like brownies. And they were so yummy! They kept very well for over a week in the fridge. I just would let them sit out for an hour before eating to bring them to room temperature.

Red Velvet Cake Mix Bars

There’s just something about Red Velvet that screams “Valentine’s Day” I love Cake Mix Cookies, so I thought these Red Velvet Cake Mix Bars would be a fun variation. And of course who can resist something with M & Ms mixed in?

Cook Time 35 minutes
Total Time 50 minutes
Servings 20 bars

Ingredients
  

  • 1 box of Red Velvet Cake Mix
  • 1 egg
  • 1/2 cup butter 1 stick, softened
  • 1 teaspoon vanilla
  • 1 1/2 cups of of Valentine M & Ms

Instructions
 

  • Preheat oven to 350 degrees. Line a 11 3/4" x 7 3/4" baking pan with foil and spray with cooking spray.
  • Mix cake mix, egg, butter and vanilla until blended. Fold in half of the M & Ms. Press batter into the prepared pan and sprinkle with the remaining M & Ms, pressing them into the batter. Bake for 35-40 minutes or until inserted toothpick comes out clean. Allow to completely cool before cutting into bars.

Notes

Use whatever cake mix and candy you want! Customize these for every holiday or just make two types for a pretty dessert tray.

  3. Hi! I made these for a party this past weekend – big hit! And the kids loved them too. I wondered about leaving out the water that the box calls for and even looked at similar recipes on other sites, but in the end I decided to try it your way. So I stirred and stirred until my arm was tired, but it did finally all get mixed together. I had to dampen my hands and press the batter into the pan, but it puffed up nicely and filled out the pan. Great recipe, ridiculously easy! I’ll definitely make these again. Thank you!

    I tried this recipe and it failed. There was nothing but a bunch of dry powder with a few moist clumps. I just looked at a similar recipe and it called for 3 eggs instead of the 1 listed in your recipe. How did you get these to turn out?

    1. The batter does come out seeming quite dry. I mixed it with a wooden spoon and kind of pressed it together in any places there were clumps. It bakes up quite nicely. It’s more of a cookie than a cake consistency.
