Roasted Brussels Sprouts with Bacon are slightly sweet, savory and irresistibly crispy. They’re an easy side dish to serve with dinner or for a holiday gathering.

Roasting vegetables in the oven gives them the best crispy texture, golden brown color, and even caramelizes them so they have a slight sweetness. The best part is you don’t need to use many ingredients – this roasted Brussels sprouts with bacon recipe just uses oil, honey, and a few spices – to have a super flavorful side dish.

How To Roast Brussels Sprouts

See recipe card below for ingredient quantities and full instructions.

  1. Prep – Start by preheating the oven to a high temperature. Make sure your oven fully preheats for best results!
  2. Toss Brussels – Add the halved brussels sprouts to a large bowl and toss with the oil and spices. Make sure the pieces are evenly coated.
  3. Add to Baking Sheet – Spread the coated brussels sprouts onto a baking sheet in a single layer. Make sure not to crowd the pan. Sprinkle the bacon pieces evenly around.
  4. Roast – Roast in the preheated oven until the sprouts are brown and tender and the bacon is cooked. I recommend giving everything a toss halfway through to ensure even cooking.
  5. Serve – Remove from the hot baking sheet soon, adjust salt and pepper, if needed and serve.

FAQs

They’re a super versatile vegetable! Pair them alongside steak, chicken, pork, or even seafood like salmon.

What is the best way to cook brussels sprouts?

Roasting brussels sprouts makes them tender but not mushy, and roasting brings out an incredible flavor. Roasting with bacon adds smokiness and texture.

Why Won’t My Brussels Sprouts Get Crispy?

There are a few keys to getting super crispy brussels sprouts:

  • A Hot Oven – Make sure it’s preheated to a high temp (at least 400 degrees F.)
  • Space on the pan to roast – Don’t crowd them or they’ll steam.
  • Dry the brussels sprouts – After rinsing, make sure to dry off any excess water

Serving Suggestions

Brussels Sprouts are a perfect pairing with so many different meals. Lemon Chicken, Pan Roasted Pork Tenderloin, and Honey Lemon Roast Chicken are just a few of our favorites! They can even be served as a holiday side dish with your Thanksgiving Turkey.

Variations

  • Pancetta – Instead of bacon, try swapping in diced pancetta instead!
  • Vinegar – Balsamic vinegar glaze would be a delicious topping, adding a nice tang and sweetness.
  • Pre-Shredded Brussels Sprouts – For a faster baking time, you can use shredded brussels sprouts instead. They will bake way faster (only about 15 minutes) and get super crispy.

Storage and Reheating

Storage – Leftovers can be stored in an airtight container in the fridge for up to 4 days.

Reheating – For best results, reheat leftovers in a 400℉ oven for about 5 minutes until warmed.

Pro Tips

  • Adjust bake time – The longer you bake them, the crispier and brown they will get! I love them pretty browned and crisp, but you can adjust the baking time to your preference.
  • Don’t crowd the pan – When roasting vegetables, it’s important to not crowd them. You want there to be space in between them so they roast instead of steam.
  • Cut side down – This is an extra quick step, but I like to flip the sprouts so that the cut side is down. This helps the cut side get super crispy and caramelized.
