Double Chocolate Peppermint Cookies

Chocolate and peppermint is probably the world’s greatest flavor combo in my book, rivaled only by chocolate and peanut butter. Sweet, rich chocolate and cool mint, it makes my mouth water just thinking about it. Which is why I can’t get enough of these chocolate peppermint cookies! They are perfect for gift giving this holiday season.

My son’s teacher loves Friday’s because I always bring in letter of the week treats for the class. They love peeking into the box of goodies and trying to guess what I made for them. Well this past Friday was their Walk-a-Thon and it was a half-day of class, meaning, no letter of the week treats! She casually mentioned that they needed cookies and of course I said yes! I decided that it was the perfect opportunity to use up a couple boxes of chocolate cake mix I’ve had in my cupboard. I’ve been wanting to make some cake mix cookies and thought why not take it up a notch and throw in some Tollhouse Winter Dark Chocolate and Mint morsels.
