About The Recipe

If you are looking for an easy, super simple cookie that you can make in less than 30 minutes, this Cool Whip Cookie recipe is it! All you need is a box of cake mix, a tub of Cool Whip, an egg and some powdered sugar.

The cookies are light and pillowy soft with just the right amount of chewiness. They bake up with a beautiful crinkly finish and fluffy texture – these Cool Whip crinkle cookies are impossible to resist!

Ingredients You’ll Need

  • Box of Cake Mix – I used a 15.25-ounce box of Devil’s Food Cake Mix for these cookies. You can use any flavor of cake mix to match the occasion. Wouldn’t Funfetti cake mix be great for a birthday party?
  • Cool Whip – Use the lite version if you want, or even a different brand.
  • Egg – Just one egg is all that’s needed.
  • Powdered Sugar – Also known as confectioner’s sugar. This ingredient is optional, but make the cookie dough easier to work with, and makes them prettier.

How To Make Cool Whip Cookies

See recipe card below for ingredient quantities and full instructions.

  • Mix the first 3 ingredients in a large bowl. Pro tip – Whisk the egg in the bowl first, just enough to break it up, then add the cake mix and Cool Whip. No need to dirty a bowl just to whisk the egg!
  • Scoop out dough and roll in powdered sugar.
  • Bake at 350℉ for 10 minutes, then transfer baked cookies to a wire rack to cool.

Storage

Room Temperature Storage: Store cooled cake mix cookies in an airtight container for up to 4 days. No refrigeration needed.

Freezer Storage: First allow cookies to cool completely. Stack cookies in a freezer safe container with parchment paper in between the layers. Or, place the cookies on a parchment-lined cookie sheet and flash freeze for 1-2 hours. Once cookies are solid, transfer to a freezer bag. Freeze for up to 3 months.

Expert Tips

  • Stirring will take about 3 minutes, it can take a while to make sure all the cake mix is dissolved. Don’t use an electric hand mixer or stand mixer – it will deflate the Cool Whip.
  • To make perfectly shaped cookies, use a glass and swirl around each cookie when it’s still hot from the oven.
  • These cookie dough balls are sticky! Drop from the cookie scoop straight into the powdered sugar; do not try to roll in your hands.
  • I used chocolate cake mix, which is perfect year round. Try using a different flavor of cake mix for different cookie flavors, like red velvet cake mix for Christmas or lemon cake mix for spring.
