Quick & Easy Mexican Bites from Ella Claire

I am so happy to be participating in this fun game day appetizer series, so thank you Kristin for inviting me!
I have a couple of appetizers that I usually rotate when it comes to making party food. As far as watching football goes, I seem to make this one A LOT! I think it is because it is SO easy. I got this recipe from my sister, {Thanks Meggs!} and I hope you like it as much as I do.

I usually make a up a big platter and just take it with me whenever we are invited to watch the game anywhere. It literally takes just a few minutes to make the whole plate.

To make these, you will need:
~refried beans {seasoned to taste}
~sour cream
~shredded cheese
~tomatoes
~green onions
~Black Pepper Triscuits

1. Lay out the number of peppered triscuits you want to use.
2. Spread your refried beans on each cracker.
3. Drop a small dollup of sour cream on each.
4. Sprinkle shredded cheese on each.
5. Place a piece of tomato them.
6. Sprinkle your green onions all over all of them.
Easy, right? And they taste so good. The peppered crackers make all the difference. The trick to these is that speed is key. They don’t have to be perfect.
{Tip: I made mine with no-fat refried beans, low fat sour cream, and Weight Watchers shredded low-fat mexican cheese and they were fabulous!}
