Spicy Garlic Shrimp

Spicy Garlic Shrimp are juicy, succulent and garlicky with a fantastic spicy finish. Delicious served over pasta or rice for dinner or as a cold appetizer.

Ingredients

  • 1 ½ pound medium shrimp tail on, peeled and deveined
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 6 garlic cloves minced
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh minced parsley plus some for garnish

Instructions

  • Preheat oven to 400 degrees. Line a large rimmed baking sheet with nonstick foil or parchment paper.
  • In a large bowl whisk together the olive oil, lemon juice, garlic, salt, pepper, red pepper flakes and parsley.
  • Add raw shrimp to the bowl and gently stir with a spoon to coat.
  • Spread the shrimp evenly on the prepared baking sheet. Bake in the preheated oven for 8-10 minutes, just until shrimp turns pink and is firm.
  • Serve as a meal with a salad, or on top of rice or pasta. Also delicious as a cold appetizer served with cocktail sauce! Garnish with fresh minced parsley.
