Ingredients
2tablespoonsvegetable oil
1/2a white onionfinely diced (about 3/4 cup)
4clovesgarlicminced (about 1 tablespoon)
2cupsfrozen peascarrots and corn
3-4cupscooked white or brown rice
6slicesbaconcooked and roughly chopped
2cupspineapple tidbitsdrained
3green onionssliced
3tablespoonslow sodium soy sauce
1/4teaspoonblack pepper
Instructions
Heat a large skillet or wok over medium-high heat.
Heat vegetable oil and add onions. Cook, stirring often, until soft and translucent; about 3-4 minutes. Add vegetables and cook until tender; about 2-3 minutes. Stir in garlic and cook for about a minute.
Stir in rice, green onions, pineapple, bacon, soy sauce and black pepper. Cook, stirring constantly, until heated through; about 2 minutes.
Notes
You can always add any leftover chicken and pork into this rice if desired.
