Combine peach slices and peach vodka in a blender and pulse until smooth.
Pour the peach mixture into 2 champagne flutes until half full. Drizzle in grenadine, then fill glasses to the top with champagne or prosecco.
Serve immediately, garnished with peach slices and mint, if desired.
Because amounts can vary, nutritional information is provided as an approximate only. Instead of champagne, prosecco or sparkling wine can be used. For a non alcoholic drink, use sparkling soda or ginger ale in place of the champagne and eliminate the vodka. You could also add some peach nectar.
