One Pot Chicken Alfredo is a quick and easy meal made in just one pot! Pasta, chicken, and a creamy alfredo sauce come together for a fantastic dinner that's ready in just 30 minutes!
1poundboneless, skinless chicken breastcut into small pieces
1tablespoonextra virgin olive oil
1cupchicken brothvegetable broth may be substituted
1cupheavy whipping cream
1/2pounduncooked pastaPenne, rigatoni, rotini, etc.
1cupparmesan cheesefreshly shredded
In a large pot, heat oil over medium heat. Season chicken pieces with salt and pepper and add to the oil. Cook chicken until no longer pink, turning a few times to ensure even browning. Add in garlic and continue to cook until garlic is fragrant.
Stir in chicken broth, heavy whipping cream, pasta, cream cheese, butter, and Italian seasoning. Bring to a boil and then reduce to a simmer to cook for 15 minutes.
Remove from heat and stir in parmesan cheese. Serve immediately, garnished with fresh Parmesan cheese, minced parsley or basil and fresh cracked black pepper if desired.
