Instant Pot Pulled Pork

Servings: 4 people
- 3 lb pork butt or shoulder cut into 4 pieces
- 1/2 cup chicken broth
- 1/2 cup apple cider vinegar
- 2 tbsp brown sugar
- 1 tbsp dijon mustard
- 2 tsp salt
- 1 tsp pepper
- 1 cup bbq sauce plus more for serving
- 1 tbsp oil
Heat your Instant Pot to saute. Sprinkle your pork with the salt and pepper. Add oil to Instant Pot once it says HOT.
Add pork pieces to the pot. Cook 4-5 minutes on both sides, until browned.
Turn off the saute function. Add brown sugar, mustard, broth, and vinegar. Put lid on and turn to seal. Set timer for 35 minutes. Let cook and when timer beeps, let natural release. (NOTE! If you do not let it naturally release, your meat will be tough!)
Once pressure is released, open the lid and shred the pork. Add bbq sauce and serve as desired.
