These incredible Cheesy Chicken Quesadillas are going to be a new family favorite! Packed full of tender chicken and melted cheese, and perfect for loading on your favorite toppings.
2tablespoonsFresh chopped cilantroplus more for garnish
4largeFlour tortillas
1cupShredded Pepper Jack cheese
1cupShredded Muenster cheese
Instructions
Heat a large skillet over medium high heat. Add 1 tablespoon of oil and saute the peppers and onions until softened and starting to brown.
Add in the chicken, taco seasoning, fresh lime juice and water. Stir to combine and cook until just heated through and the water has evaporated. Set aside.
In a small bowl combine the cheeses.
Lay out your 4 tortillas on a flat surface, like a large cutting board. Add ¼ cup of cheese mixture on on half of each tortilla. Add chicken and pepper mixture on top of the cheese. Finally, use the remaining cheese and divide it amongst the tortillas placing it on top of the chicken mixture and fold the tortilla over.
Clean out the pan and return to the stove over medium low heat. Use the remaining oil to wipe oil across the open surface of the tortillas to help them crisp up as they are cooked.
Place 1-2 of the folded tortillas in the pan and cook until the first side is golden brown, about 2-3 minutes. Flip the tortillas over and cook for another 2-3 minutes until golden brown and the inside cheese is melted. Remove to a cutting board and cook the remaining quesadillas.
Cut each quesadilla into half or thirds and serve with your favorite toppings.
Notes
Serve with your favorite salsa, guacamole, sour cream and avocado slices.
