Ingredients
1
cup
chopped romaine lettuce
½
cup
shredded or cubed cooked chicken
2
tablespoons
bottled Caesar dressing
1
slice
bacon
cooked and crumbled
1
tablespoon
diced tomatoes
½
tablespoon
freshly grated Parmesan cheese
4
large croutons
roughly chopped
Freshly ground pepper
1
12-inch flour tortilla
Instructions
In a large bowl, combine the chicken, romaine, Caesar dressing, bacon, tomatoes, Parmesan, and black pepper. Stir in the crumbled croutons.
Warm the flour tortilla in the microwave for 10 to 15 seconds so it folds easily.
Lay the tortilla flat and pile the filling down the center. Fold in two sides, then roll up like a burrito.
Stick a toothpick in each half, then slice in half on the diagonal with a serrated knife.
Notes
Dress just before serving.
Caesar dressing wilts lettuce, so toss and wrap right before eating.
For lunchboxes,
pack the filling undressed and bring the dressing as a dip on the side.
Chicken options:
rotisserie, shredded, or leftover grilled chicken all work.
Make it lighter:
use a whole wheat or low-carb tortilla, light dressing, and skip the bacon.
Add croutons last,
roughly crumbled, so they stay crunchy.
Storage:
keep undressed components in airtight containers in the fridge for several days. Freezing is not recommended.
