Spray a microwave safe mug with cooking spray. Crack the egg into the mug and lightly scramble. Season with a pinch of salt and pepper to taste.
Place the mug in the microwave and cover with a wet paper towel. Cook on high for 30-40 seconds. If there is still liquid in the mug, cook for an additional five - ten seconds.
To Make a Breakfast Sandwich:
Toast the English Muffin to your liking. Spread butter if desired. Top with slice of ham, the egg and shredded cheddar cheese and replace the top of the muffin. Enjoy hot!
Nutrition facts are for just the scrambled egg, not the breakfast sandwich, which is a separate recipe. These scrambled eggs take less than a minute to prepare, but you could actually prepare several at a time and freeze or make sandwiches to freeze ahead.Prepare the sandwich as desired with english muffins, egg, ham and cheese. Let them cool completely, then wrap tightly in foil and pop them into a freezer bag. They'll last in the freezer about 3 months. To reheat from frozen, place the wrapped sandwiched in a 350 degree oven and heat for 5-10 minutes or until fully heated through.
