How to Make Microwave Scrambled Eggs

Spray a microwave-safe coffee mug with nonstick cooking spray.

Yes, absolutely! Just whisk them up in a bowl and pop them in the microwave. Fluffy scrambled eggs any time!

How long does it take to cook an egg in the microwave?

It only takes about 30-40 seconds to microwave a scrambled egg. Keep in mind that microwave wattages vary, so you’ll have to test yours – it might take a few seconds more or less.

Should I add milk or water?

It’s not necessary. I have found that I get fluffy eggs in the microwave without any of these additions. However, you can add them if you want to.

Make Ahead and Freezing

These scrambled eggs take less than a minute to prepare, but you could actually prepare several at a time and add to burritos or sandwiches and freeze for a quick breakfast on a busy morning.

Prepare the sandwich as desired with English muffins, egg, ham, and cheese. For burritos just cut the egg into a few pieces and add with your choice of meats and cheese. Let them cool completely, then wrap tightly in foil and pop them into a freezer bag. They’ll last in the freezer for about 3 months.

To reheat from frozen, place the foil-wrapped sandwiches or burritos in a 350℉ oven and heat for 5-10 minutes or until fully heated through.

  • For more than one egg, use a small bowl or pie plate instead of a mug.
  • Feel free to add the seasoning of your choice or extras like shredded cheese.

  • 1 egg

  • kosher salt and black pepper to taste

Instructions
 

  • Spray a microwave safe mug with nonstick cooking spray. Crack the egg into the mug and lightly scramble. Season with a pinch of salt and pepper to taste.
  • Place the mug in the microwave and cover with a damp paper towel. Cook on high for 30-40 seconds. If there is still liquid in the mug, cook for an additional 5-10 seconds.

    I’ve done this exact same thing for months now! I usually simplify it down to just an egg, a slice of american cheese, and a whole grain English muffin. Healthy, easy, and cheap – just the way I like it!

    So glad to see micro egg sandie on a site. I have been doing this for years as my go- to quick protein breakfast. I have transitioned to using a poured from carton type liquid egg to cut back on cholesterol. I use the type that looks like real eggs not the egg white one. I was surprised that the ingredients on the carton says it contains egg white only too. By the time I sprinkle a little cheese and packaged real bacon pieces it has some fat, but at least I can control it. A good addition to the egg is cottage cheese with a bit of green onion after it cooked. A satisfying way to fuel up for a busy morning.

      I, too use, egg whites and usually try to find the yellow ones that are seasoned with onions and bellpeppers. Everything else the same as above. I’ve never used cottage cheese, but may as it is a bit more protein…….thanks for the idea.
