Instructions
Preheat oven to 425℉. Place a large rimmed baking sheet in the oven to heat up, I used a 15x10” pan.
If making the dipping sauce, whisk all sauce ingredients in a small bowl and place in fridge until ready to serve.
While the oven heats, place the butter in a large mixing bowl and melt in microwave, about 15 seconds. Add to the bowl the olive oil, potatoes, salt, pepper, Italian seasoning, paprika, and red pepper flakes if using. Toss to coat.
Remove hot baking sheet from oven, spray very lightly with non stick cooking spray and CAREFULLY place potatoes on the pan in a single layer, cut side down. Drizzle with any butter left in the bowl. Add fresh thyme sprigs on top of potatoes if using.
* TIP: Place smaller potatoes toward the center of the pan and larger ones on the outer edge, this will help them cook evenly.
Roast for 15-20 minutes, or until potatoes are fork tender and deeply golden brown. Flip potatoes during last 5 minutes to crisp the top of the potatoes if desired. Taste and adjust seasoning. Garnish with fresh parsley and serve immediately.
Air fryer instructions: Preheat air fryer to 400℉. Season potatoes as instructed. Place half of the potatoes in the air fryer basket (they do not need to be cut side down) and air fry for 12-15 minutes, or until cooked through, shaking basket halfway through. Repeat process with remaining potatoes.
Notes
Feel free to use fresh herbs in place of Italian seasoning. Use about a heaping tablespoon total of a mix of any herbs you have on hand. Parsley, thyme, rosemary, oregano, or even cilantro would be great.
The dipping sauce is completely optional, whip up this tasty aioli if desired and if it fits in with the rest of your meal. A teaspoon of minced cilantro and lime juice, in place of lemon juice, adds a delicious twist to this sauce.
