Preheat oven to 375 degrees. Prepare a baking sheet with parchment paper.
In a small bowl, mix cheeses together.
Sprinkle work surface with ¼ of the cheese mixture.
Brush one side of puff pastry with egg wash.
Place one puff pastry sheet, egg-side down, on top of cheese.
Brush top of puff pastry with egg wash, then sprinkle another ¼ of cheese on top and with a rolling pin, roll sheet to ¼ inch thick.
Slice into about 10 1-inch-thick strips.
Twist each strip and place on baking sheet – repeat process with remaining puff pastry and cheese.
Bake for 18-20 minutes or until golden brown.

These puff pastry cheese twists are delicious when served warm from the oven, and are just as delightful at room temperature.
Keep in an airtight container at room temperature for up to 5 days.
If they’ve gone a little stale, crisp them up in an oven or air fryer at 350°F for 3-4 minutes.
