Why We Love it

My kids are pretty typical when it comes to vegetables. They don’t want to eat them unless they are drowning in ranch. Sound familiar? I was getting a little tired of watching them slurp up puddles of ranch dressing just to get them to eat a few pieces of broccoli.

So how to get your kids to eat vegetables without a ton of sauce? Add flavor!

I love that this recipe takes just 5 minutes to cook. The broccoli has a ton of flavor from the ranch seasoning and butter, and it’s tender-crisp in just a few minutes. You can cook it longer if your family prefers the broccoli softer. Finish it off with some Parmesan cheese for the perfect quick and easy side dish!

How to Make Parmesan Ranch Sauteed Broccoli

Heat a large skillet over medium-high heat. I use my 12-inch cast iron but you can use whatever will fit the amount of broccoli you’re cooking.

Melt some butter in the skillet, then add your broccoli. Saute it for about 4-5 minutes just until it’s starting to soften and has turned a bright green. My family likes their veggies more crisp so you may want to cook it a little longer if you prefer it softer.

Sprinkle some Ranch seasoning over the broccoli and a little bit of water. Stir all that together to get the ranch flavor coating each piece. Cook for just a minute, or longer if you like.

Sprinkle Parmesan cheese over broccoli and serve hot.

Store any leftovers in an airtight container in the fridge for up to 3-4 days.

Both of my kids, even my veggie-hating son, loved it! He ate every piece on his plate without any prodding from me. I’d call that a win.

Ingredients
  

  • 6-7 cups broccoli about 1 ½ pounds, stalks removed
  • 1 1/2 teaspoons dry Ranch dressing mix
  • 2 tablespoons butter
  • 2 tablespoons fresh grated Parmesan

Instructions
 

  • Heat a large skillet over medium-high heat.
  • Melt butter in the skillet, then add broccoli. Stir to coat and cook for about 4 minutes, until broccoli starts to soften but still has a crisp bite to it.
  • Sprinkle Ranch mix over broccoli. Add about 2-3 tablespoons of water and stir to coat broccoli completely. Cook for about a minute. If you prefer broccoli to be very soft, cook a couple of minutes longer.
  • Sprinkle Parmesan cheese over broccoli and serve hot.

Notes

This would also work well with cauliflower.

    Can the oven roasted Parmesan potatos be made using sweet potatoes?

      I haven’t tried that, but I think it would work. Just alter the cooking time to suit the type of potato you’re using.

    Can you use for frozen broccoli?

      The frozen broccoli would release too much liquid. If would have to be thawed/cooked first which would defeat the purpose.
