Your family is going to love our Roasted Fingerling Potatoes recipe! They are a super simple side dish that tastes great with just about any main. Tender and fluffy on the inside, crispy and delicious on the outside.
Try This Next: My Garlic Mashed Potatoes or Crispy Loaded Smashed Potatoes are other side dish favorites you’ll want to serve again and again.

When you cook fingerling potatoes like this, they are tender on the inside and crispy on the outside. Seasoned with garlic, herbs, and a touch of butter for incredible flavor. This recipe is fast enough for weeknights but impressive enough for a holiday table.
The trick to perfect roasted potatoes is starting with a hot pan so the cut sides crisp up immediately. For even cooking, place smaller potatoes toward the center of the pan and larger ones around the edges. A sprinkle of fresh parsley or thyme at the end gives them a fresh finish, and if you’re feeling extra, a quick homemade dipping sauce makes them even better.
Why I Love This Recipe
- Quick and easy. Ready in just 30 minutes with minimal prep.
- Perfect texture. Crisp outside, fluffy inside every time.
- Customizable. Swap seasonings or add fresh herbs to fit your main dish.
- Air fryer option. Just 15 minutes for the same crispy finish.
RECIPE WALK-THROUGH
Before You Begin
Preheat your oven with the baking sheet inside. A hot pan helps the potatoes crisp rather than steam. Wash and halve the potatoes just before roasting, as cutting them ahead of time can cause them to turn gray.
Tools and Equipment
- Large rimmed baking sheet (15×10 recommended, or 2 smaller pans)
- Mixing bowl
- Microwave-safe bowl for melting butter
- Spatula or tongs
- Knife and cutting board
How To Make Roasted Fingerling Potatoes
See the recipe card below for full, detailed instructions
Preheat oven to 425°F with a large baking sheet inside.

Melt butter in a large bowl. Add olive oil, garlic, potatoes, salt, pepper, Italian seasoning, paprika, and red pepper flakes if using. Toss well.

Carefully remove the hot baking sheet from the oven and lightly spray it with nonstick cooking spray. Place the potatoes cut-side down in a single layer. Drizzle with any leftover butter mixture and add thyme sprigs if using.

Roast 15 to 20 minutes until fork-tender and golden brown. Flip during the last 5 minutes for extra crisp tops.

Garnish with fresh parsley and serve with dipping sauce if desired.
Air Fryer Instructions
- Preheat air fryer to 400°F.
- Cook half the potatoes at a time for 12 to 15 minutes, shaking halfway through.
- Repeat with the remaining potatoes.
Serving Suggestions
Serve with chicken, steak, or seafood, or pair with burgers at a cookout. Swap the herbs and spices to complement your meal. Rosemary works well for roasts like Prime Rib, or try cilantro with lime for an excellent side for Enchiladas.
Storage Tips
Make Ahead, Storage and Reheating
Storing: Store roasted potatoes in an airtight container in the fridge for up to 5 days. Freeze completely cooled potatoes in a freezer-safe container or plastic bag for up to 3 months.
Reheating: Use the oven or air fryer for the best crispness. Avoid the microwave.
Make Ahead: Cutting ahead isn’t recommended, but you can roast and reheat them later.
Recipe Tips
- A teaspoon of salt per 2 pounds of potatoes is a good rule of thumb.
- Place smaller potatoes toward the center of the pan, larger ones on the edges for even roasting.
- Don’t skip preheating the pan; it is the way to those crispy bottoms.
- Flip in the last 5 minutes for golden tops.
- Try this same roasting method with different spices to complement your main dish.
- Small Yukon gold or baby potatoes roast well with the same method.

Roasted Fingerling Potatoes
Ingredients
- 2 pounds Fingerling potatoes washed and halved lengthwise
- 1 tablespoon Butter
- 1 tablespoon Olive oil
- 2 Garlic cloves pressed or minced
- 1 teaspoon Kosher salt
- ½ teaspoon Freshly cracked black pepper
- ½ teaspoon Italian seasoning
- ½ teaspoon Paprika
- Pinch Red pepper flakes optional
- 3 sprigs Fresh thyme optional
- Fresh minced parsley for garnish optional
- Non stick cooking spray
Dipping Sauce (optional)
- ½ cup Mayonnaise
- Pinch Salt and pepper
- 1 small clove Garlic minced
- 1 Green onion green party only, very thinly sliced
- 1 teaspoon Lemon juice freshly squeezed
Instructions
- Preheat oven to 425℉. Place a large rimmed baking sheet in the oven to heat up, I used a 15×10” pan.
- If making the dipping sauce, whisk all sauce ingredients in a small bowl and place in fridge until ready to serve.
- While the oven heats, place the butter in a large mixing bowl and melt in microwave, about 15 seconds. Add to the bowl the olive oil, potatoes, salt, pepper, Italian seasoning, paprika, and red pepper flakes if using. Toss to coat.
- Remove hot baking sheet from oven, spray very lightly with non stick cooking spray and CAREFULLY place potatoes on the pan in a single layer, cut side down. Drizzle with any butter left in the bowl. Add fresh thyme sprigs on top of potatoes if using.
- * TIP: Place smaller potatoes toward the center of the pan and larger ones on the outer edge, this will help them cook evenly.
- Roast for 15-20 minutes, or until potatoes are fork tender and deeply golden brown. Flip potatoes during last 5 minutes to crisp the top of the potatoes if desired. Taste and adjust seasoning. Garnish with fresh parsley and serve immediately.
- Air fryer instructions: Preheat air fryer to 400℉. Season potatoes as instructed. Place half of the potatoes in the air fryer basket (they do not need to be cut side down) and air fry for 12-15 minutes, or until cooked through, shaking basket halfway through. Repeat process with remaining potatoes.
Notes
- Feel free to use fresh herbs in place of Italian seasoning. Use about a heaping tablespoon total of a mix of any herbs you have on hand. Parsley, thyme, rosemary, oregano, or even cilantro would be great.
- The dipping sauce is completely optional, whip up this tasty aioli if desired and if it fits in with the rest of your meal. A teaspoon of minced cilantro and lime juice, in place of lemon juice, adds a delicious twist to this sauce.
