Before You Get Started
Pizza nachos are easy. The only thing that goes wrong is texture, and it goes wrong fast. These three things are what keep every chip crisp.
- Have everything ready before you assemble — Chips start softening the second the sauce hits them. Chop, grate, and open everything first.
- Use a thick pizza sauce — Thin sauce runs straight down through the chips and soaks them. I use Rao’s.
- Spread the chips in one even layer — Piling them up traps steam underneath, and you’ll end up with a soft, sad middle.
What Kind of Chips Work Best
The chips are key here. They’re holding sausage, sauce, and two kinds of cheese.
Go with sturdy, thick restaurant-style tortilla chips. Thin chips break under the toppings and turn limp before the cheese even melts. A 12 ounce bag covers one large sheet pan in a single layer, which is exactly what you want.
Flavored chips are fair game too. Ranch Doritos are surprisingly good under all that pizza sauce.

Step 1: Prep the pan and toppings
Preheat the oven to 425°F and line a large sheet pan with parchment or foil. Cleanup is not fun otherwise.
Heat the olive oil in a small saute pan over medium heat and add the diced bell pepper. Cook about 3 minutes, until it’s bright green and just starting to soften. That quick saute cooks out some of the water, so the pepper doesn’t release it onto your chips in the oven.
Stir the melted butter and garlic salt together in a small bowl and set it aside.

Step 2: Layer the chips, sausage, and sauce
Spread the tortilla chips across the pan in a single layer, edge to edge. Don’t pile them.
Scatter the cooked Italian sausage over the chips, then spoon half the pizza sauce on top. Spoon it in small dollops rather than pouring it, so no one chip takes on a puddle. Finish with the mozzarella and parmesan.

Step 3: Add the toppings and garlic butter
Scatter on the olives, red onion, sautéed bell pepper, and mini pepperoni. Spread them out instead of clustering them so every chip gets something.
Drizzle the garlic butter over the whole pan. This is the part that makes it taste like pizza crust.

Step 4: Bake and serve
Bake for about 8 minutes, until the cheese is fully melted and the pepperoni edges have curled and crisped. Watch the pepperoni more than the clock. That’s your clearest cue.
Serve right away with the rest of the pizza sauce for dipping. Warm it first, it’s much better than straight from the jar. The chips soften as they sit, so bring the pan straight to the table.
- Want maximum crunch? Skip the sauce during assembly and drizzle it over the nachos right out of the oven. The chips stay crispier. You do lose a little of that melted-into-the-cheese pizza effect, so it’s a trade.

Air Fryer Pizza Nachos
The air fryer is the better call when you’re feeding two people instead of eight.
Line the basket with a parchment air fryer liner and assemble a half batch the same way. Air fry at 400°F for 3 to 5 minutes, until the cheese melts. Eat them immediately.

Make It Your Own
The combination here is the classic: sausage, pepperoni, olives, red onion, and bell pepper. It tastes like a supreme pizza, and it’s the version I’d make first.
From there, load them however you like. Mushrooms, cooked bacon, diced jalapeños, banana peppers, and cooked diced onion all work well. Just skip anything watery. Fresh tomatoes and spinach release liquid in the oven, and that liquid goes right into your chips.
For the meat, use mild or hot Italian sausage depending on how much heat you want. Ground beef or ground turkey work too. Season them with a teaspoon of Italian seasoning plus a pinch each of salt, pepper, garlic, onion, and crushed red pepper, or they’ll taste flat next to the pepperoni. And if you only have regular pepperoni, quarter the slices so they spread out the way the mini ones do.
What to Serve Alongside

Storage and Leftovers
I’ll be honest with you. These don’t keep well.
Cover leftovers and refrigerate them for up to 2 days, but the chips soften overnight and that texture doesn’t come back. Reheating doesn’t fix it either. If you’re feeding a crowd, you’re better off baking one pan, then assembling a second while everyone’s eating so the next round comes out fresh.
