When it comes to snacking, we aren’t too picking. If it’s salty or crunchy, we are happy campers. This Cheesy Corn Dip fits that criteria and so much more.
I love easy appetizers and snacks that can feed a crowd and this dip is no different. It comes together in literally just about 5 minutes. I like to let it chill in the fridge to let all the flavors meld nicely together, but it can be served immediately if you’ve got hungry guests, or kids.
Hidden Ranch Dip Mix is the base for this recipe, combined with 16 ounces of sour cream. I was a little obsessed with ranch dip and chips when I was younger. We had it at every singe family or friend gathering. Ranch mix, sour cream and potato chips – it didn’t take much to make us kids happy! But now I want something a little more substantial than just flavored sour cream, which is where this cheesy corn dip comes in.
So back to the recipe…sour cream + ranch dip = heaven as we know. But then you add salsa, green chiles, cheddar cheese and corn for a little “pop” of texture.

Cheesy Ranch Corn Dip
- 16 ounces sour cream
- 1 cup salsa
- 1 8- ounce can green chiles
- 1 cup shredded cheddar
- 1 packet Ranch dressing mix
- 1 15- ounce can corn
- Stir Ranch mix and sour cream together in a medium sized bowl until well combined. Stir in remaining ingredients. Chill for 30 minutes to an hour (preferably) or serve immediately. Serve with tortilla or corn chips.
