It’s hard to beat an easy, no-bake dessert. Especially when there are marshmallows and Oreo cookies involved. These Oreo Rice Krispie treats are extra gooey and packed with chopped Oreo cookies. They can be made in either the microwave or on the stove, and make a great lunch box treat.

How To Make Rice Krispie Treats with Oreos

  1. Start by melting butter and marshmallows together using one of the methods outlined above.
  2. Stir the cereal and chopped Oreos into the gooey marshmallow mixture, then press into a greased 9×13 inch pan. I always lightly spray my hands with non-stick cooking spray to press the mixture into the pan.
  3. Let the treats cool completely before cutting into them.

Because I like my Rice Krispies extra gooey, I use a little less cereal so the marshmallow ratio is a little higher.

The Oreos

Who doesn’t love Oreo cookies? For this recipe, we’re basically taking the classic treats, and adding chopped up Oreo cookies. I chop the cookies whole – so that there’s both wafers and filling in the bars. You can also put them in a plastic ziploc bag and crush them with your hand or with a rolling pin.

There are tons of flavors available now, so you can really play around and customize these treats based on your favorites, or the season. Trader Joe’s Jo Jos cookies work great as a substitution.

How To Melt the Marshmallows

Because I like my Rice Krispies extra gooey, I use a little less cereal so the marshmallow ratio is a little higher.

There are two simple methods for melting the marshmallows that I have used with great success – the microwave and the stovetop. Each method takes just minutes from start to finish.

Microwave: If you’d like to use the microwave to make your treats, you’ll add the butter and marshmallows to a very large bowl. Microwave on medium power for 45 seconds, remove from the microwave and stir. You’ll repeat the process until they’re just melted together. It’s super important that the microwave is on medium power (not high), otherwise, the sugar of the marshmallows can burn, resulting in hard rice krispy treats.

Stove Top: Melt the butter and marshmallows together in a large saucepan over low heat while gently stirring.

I should also note that I use more marshmallows than the original recipe, because I really want to capitalize on that ooey-gooey sticky marshmallow factor. If you prefer the texture of the classic recipe, you can use 16 ounces instead of 20 ounces.

FAQs

How long do they last?

In my house – not long! But seriously, if you store them in an airtight container at room temperature, they will last about 5 days. Cut them right before you plan to serve them. If you’re making them ahead of time, wrap in plastic wrap before storing.

Why are my rice krispie treats hard?

If the marshmallows are melted too fast, or the heat is too high, your marshmallows will harden as they cool, and the treats will be hard instead of soft and chewy. This is why it’s important to melt over low heat and just until they are almost fully melted.

Can you freeze rice krispie treats?

Surprisingly they freeze quite well! Place the treats in a freezer safe container in layers, separated by parchment paper. Store in the freezer for up to 6 weeks. Thaw at room temperature for 15-20 minutes before serving.

Variations

Peanut butter – Use chocolate peanut butter Oreos and add a tablespoon or two of peanut butter to the marshmallow mixture.

Sprinkles – Add a couple tablespoons of sprinkles when mixing in the cereal.

Dark chocolate – Use dark chocolate Oreos.

Extra marshmallows – Only melt about ¾ of the marshmallows and reserve the rest. Stir the reserved marshmallows into the cereal mixture.

Recipe Tips

  • Use a silicone spatula and always keep nonstick cooking spray on hand. Rice Krispie Treats are very sticky, especially when still warm.
  • Grease the pan and spray your hands with nonstick cooking spray to keep them from sticking.
  • Line the pan with parchment paper and leave a little sticking out over the edges. This will provide “handles” when pulling them out of the pan.
  • Cool completely before trying to cut into bars. They will lose their shape if still warm.
  • Never put Rice Krispie treats in the fridge. They get too hard and crunchy. Always store in an airtight container at room temperature and they will stay fresh for up to 5 days.
  • Always make a double batch because these go FAST!

Instructions
 

  • Lightly grease a 9×13 inch glass pan with non-stick cooking spray.
  • Add the butter and marshmallows to a very large saucepan.
  • Melt the ingredients together over low heat while gently stirring until entirely melted.
  • Turn off the burner and stir in the Rice Krispies and chopped Oreos.
  • Spoon the mixture into the prepared pan, and using lightly greased hands press the mixture down into the pan.
  • Let harden at room temperature for 1 hour before slicing into bars.

Notes

Store bars in an airtight container at room temperature for up to 3 days. Bars will get harder as more time goes on. Do not store in the fridge.
