The Perfect Spring Breakfast

Spring is literally in a few days. I am seriously excited, being from Minnesota we kind of get sick of the long dreary winter months that seem to drag on like there is no end in sight. Luckily we have had a pretty mild winter, but still with temperatures averaging below freezing it gets tiring.

Lately I’ve been loading up on the Spring themed recipes to warm me up a little and put me in a little better mood. I mean I’ve been baking with lemon and blueberries left and right, and I swear I could write a whole blog about my love of lemon and blueberries! Lemon Blueberry Muffins, Lemon Blueberry Scones, Lemon Pound Cake, Blueberry Sour Cream Coffee Cake Muffins…I could go on and on!

I can’t help that lemon is one of my absolute favorite flavors to bake with. I mean lemon bars, lemon cream pie, lemon poppyseed bread. The flavor is just outrageous. So I mean obviously I have to have lemon for breakfast too

right? Well let me introduce you to your new favorite pancakes, the Lemon Poppyseed Pancakes!

Homemade Lemon Poppyseed Pancakes

We have always been a big pancake family. I used to refuse to eat pancakes at home when I was younger because I was so used to eating the pancakes at restaurants that I never thought that anything would ever compare to them…I mean really?

Also, I grew up with my pancakes coming from a box, so when I had my own family I started making more from scratch recipes and I have never turned back. Once in a while I’ll use a trusty box recipe, but people really don’t realize how simple homemade pancakes really are!

How to Make Lemon Poppyseed Pancakes

These Lemon Poppyseed Pancakes are so good. They have just a subtle burst of the citrus flavor with each bite and they smell utterly amazing. The Lemon Poppyseed Glaze that goes over the top is seriously amazing!

Lemon Poppyseed Glaze

You could just serve these with regular maple syrup, but how fun would that be? Especially when this glaze whips up in minutes and gives it even more of a lemon citrus punch behind each bite. I think it really really really compliments the pancakes perfectly.

And with the addition to maybe 2 extra ingredients in these Lemon Poppyseed Pancakes they couldn’t be more simple and you don’t have an excuse NOT to make these puppies, for real! We absolutely adore them, have I made that clear yet?!?! LOL!

Lemon Poppyseed Pancakes

Lemon Poppyseed Pancakes

Fluffy and delicious these Lemon Poppyseed Pancakes have a subtle burst of citrus flavor and are the perfect Spring breakfast treat!

Ingredients
  

  • 1 1./2 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 cup whole milk
  • 2 eggs
  • 1/4 cup lemon juice about 1 lemon
  • 1 tablespoon lemon zest
  • 1 1/2 tablespoon poppyseeds

Lemon Poppyseed Glaze:

  • 2 cups powdered sugar
  • 2 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1./2 tablespoon poppyseeds
  • 3-4 tablespoon milk

Instructions
 

  • In large bowl combine your flour, baking powder, baking soda, salt and sugar and stir to blend.
  • Add in your milk, eggs, lemon juice and lemon zest and mix until just blended.
  • Fold in your poppyseeds.
  • Heat a non-stick skillet or griddle to medium and lightly spray with non-stick cooking spray.
  • Using a ⅓ cup measuring cup pour your batter into pan and heat on both sides until golden.
  • Repeat with remaining batter.
  • To make your glaze mix all your ingredients in bowl, adding more milk until you reach desired consistency.

Notes

Pancakes freeze well. Just reheat in the toaster or toaster oven.
