Before You Get Started
A few quick notes before you start mixing. The name throws people off, but “crack” anything just means bacon, ranch, and cheese (the same trio that makes my Cheesy Bacon Ranch Dip so addictive). Get these three things right and the dip practically makes itself.
- Soften the cream cheese fully. Cold cream cheese leaves lumps in the dip. Let it sit at room temperature for at least 30 minutes, or microwave on low in 15-second bursts until soft.
- Drain or thaw your corn well. Excess water makes the dip runny instead of creamy and scoopable. Pat thawed frozen corn or drained canned corn dry before mixing in.
- Grate your own cheddar. Pre-shredded cheese has anti-caking agents that keep it from melting smoothly. Freshly grated off the block melts into the creamy, stretchy finish you want.

This dip comes together in about 10 minutes of prep, then the oven does the rest. Here’s how it goes.
Step 1: Prep the oven and dish
Preheat your oven to 375°F and lightly grease a small baking dish. An 8-inch square dish or a similar small casserole dish works well for this warm corn dip.
- A cast iron skillet works too if you want a rustic presentation.
Step 2: Make the creamy base
In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, and ranch seasoning and mix until completely smooth with no lumps. Lumps in the base will make for a lumpy finished dip.
- Use a hand mixer if the cream cheese isn’t fully softened.

Step 3: Stir in the good stuff
Add the corn, finely diced jalapeno, 1 cup of cheddar cheese, and most of the crumbled bacon. Fold or stir gently until evenly distributed.
- Keep a little bacon aside for the top so you get lots of crispy bits after baking.

Step 4: Transfer and top
Spread the corn mixture evenly into the prepared baking dish. Top with the remaining cheddar and reserved bacon crumbles. Smooth the top so the cheese melts evenly.

Step 5: Bake until hot and bubbly
Bake for 20-25 minutes, until the dip is hot and bubbly at the edges and the cheese on top is melted.
- Slide under the broiler for 1-2 minutes at the end if you want a deeper golden top. Watch it closely under the broiler so the cheese doesn’t burn!

Step 6: Finish and serve

Variations
A few easy ways to switch things up:
- Spicier version. Swap the regular ranch seasoning for a packet of spicy ranch. You can also leave the jalapeño seeds in or stir in a pinch of cayenne.
- Milder version. Leave the jalapeño out entirely. The dip is still creamy, cheesy, and full of ranch and bacon flavor.
- Different cheese. Swap half the cheddar for pepper jack for more heat, or Monterey Jack for a milder, meltier finish.
- Greek yogurt swap. Replace the sour cream with full-fat plain Greek yogurt (Fage 4% works well) for a tangier, slightly lighter dip.

Storage and Reheating Tips
Make ahead. This dip is a great make-ahead option. Assemble it as directed, cover tightly, and refrigerate until ready to bake. If baking straight from the fridge, add 5 to 10 minutes to the bake time so it heats through.
Storing leftovers. Cover tightly and store in the fridge for up to 3 days.
Reheating. Reheat leftovers in a 350°F oven for about 15 minutes, or until warmed through. The microwave works in a pinch but won’t restore the bubbly cheese top.
Freezing. Freezing isn’t recommended. The sour cream and cream cheese base can separate or turn grainy when thawed.
Frequently Asked Questions
Can I make this without the jalapeño?
Yes, the dip works great without it. It will still be creamy, cheesy, full of ranch and bacon flavor. Diced green chiles are a low-heat alternative that adds a hint of pepper without the bite.
Why is my dip watery?
The most common cause is corn moisture. Frozen corn needs to be fully thawed and patted dry, while canned corn needs to be drained well. Gently press canned corn in a fine mesh strainer to remove any extra liquid.
Can I use fresh corn instead of frozen or canned?
Yes. Use 6 to 8 ears (depending on size) to get 3 cups. Cut the kernels off the cob and use exactly as you would frozen or canned.
